The #32 manual grinder is a beast. It's slow, slow, slow. Grinds things up but you have to cut the meat relatively small. If I was motorizing it, I'd want a at least a 1-1/2 HP motor with a fair amount of torque. I'd also do a bunch of trial runs to make sure it worked adequately before jumping into doing a lot of meat at once.
